Step 1: Take a moment to look
Before you taste, take a moment to observe the wine in your glass. Hold it up to the light and notice the colour and clarity. Younger whites such as our 2025 Semillon, 2024 Verdelho or 2024 Riesling will appear bright and pale, while fuller styles like the 2023 Chardonnay or 2024 Chivalry show more depth. Reds range from the vibrant hues of 2023 Chambourcin to the deep, inky tones of the 2021 Premium Reserve Shiraz.
Step 2: Swirl and smell
Gently swirl the glass to release the aromas, then put the glass to your nose and breathe in the aroma. This is where much of the wine’s character reveals itself. You may notice fresh citrus and florals in the 2025 Countess or 2025 Rosé, stone fruit and subtle oak in the 2023 Chardonnay, or rich dark fruit and spice in reds like the 2023 Swordsman Shiraz, 2023 Ivanhoe Shiraz or 2023 Shiraz Cabernet. There is no right or wrong answer here – trust what you smell.

Take a small sip and let the wine coat your palate. Pay attention to flavour, texture and balance. Is it light and crisp, or bold and full-bodied? Wines such as the 2023 Jouster Shiraz (Sweet Red) and The Chalice Sparkling Red offer immediate, generous fruit, while structured wines like The Prince of Thieves Cabernet Sauvignon and 2021 Premium Reserve Shiraz reveal layers of complexity and oak influence. Notice how long the flavours linger after you swallow – this is known as the finish.
Step 4: Consider balance and style
Great wines are about harmony. As you move through the tasting, consider how acidity, tannin, fruit and oak work together. Blends like the 2023 Shiraz Merlot, 2023 Bowman (Chambourcin/Shiraz) and 2023 The Archer showcase different expressions of balance, while our whites and sparkling releases, including the 2025 Sparkling Maiden, highlight freshness and vibrancy.

“I need to be an expert to enjoy wine”
One of the most common myths is that wine tasting requires an expert palate or a deep knowledge of tasting terminology. In reality, wine is meant to be enjoyed, not analysed. Your own impressions and preferences are what matter most.

Rushing through the tasting
A frequent mistake is moving too quickly from one wine to the next. Taking your time allows you to fully experience the aromas, flavours and finish of each wine. Slowing down often reveals details you may otherwise miss.
Skipping the swirl and smell
It can be tempting to go straight to tasting, but skipping the swirl and aroma stage means missing much of the wine’s character. Smelling the wine before tasting provides valuable insight into its style and complexity.
“I’m tasting it wrong”
Many visitors worry if they do not detect the same flavours as others. Taste is highly personal, and there are no incorrect answers. What you smell and taste is shaped by your own senses and experiences.
“More expensive means better”
Price does not determine enjoyment. While premium wines often offer complexity and ageability, a well-made wine at any price point can be just as enjoyable if it suits your palate.
Avoiding the spittoon
You may notice spittoons on the table during your tasting, and whether you choose to swallow or spit is entirely up to you. Spitting is very common at cellar doors, particularly if you are tasting multiple wines or visiting several wineries in a day. It allows you to fully experience the flavours and structure of each wine without overindulging, helping to keep your palate fresh and your senses sharp.
Swallowing is, of course, perfectly acceptable too — especially if a wine truly captures your attention. Our advice is simple: do what feels comfortable for you and enjoy the tasting at your own pace.
